A hearty Italian vegetable and bean soup with pasta.

Ingredients

  • 1 onion
  • 2 carrots
  • 400 g tinned tomatoes
  • 400 g cannellini beans
  • 100 g small pasta

Method

  1. Soften the onion and carrot.
  2. Add tomatoes, beans and stock, and simmer 20 minutes.
  3. Stir in the pasta and cook until tender.
