Tomato and Basil Soup

A smooth, comforting soup built from tinned tomatoes and a handful of aromatics.

Ingredients

Servings: 4
  • 800 g tinned tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 500 ml vegetable stock
  • 1 handful basil leaves
  • 2 tbsp olive oil

Method

  1. Soften the onion and garlic in the olive oil over medium heat.
  2. Add the tomatoes and stock, bring to a simmer and cook for 20 minutes.
  3. Stir in most of the basil, then blend until smooth.
  4. Season to taste and serve topped with the remaining basil.
