A smooth, comforting soup built from tinned tomatoes and a handful of aromatics.
Ingredients

- 800 g tinned tomatoes
- 1 onion, chopped
- 2 cloves garlic, crushed
- 500 ml vegetable stock
- 1 handful basil leaves
- 2 tbsp olive oil
Method
- Soften the onion and garlic in the olive oil over medium heat.
- Add the tomatoes and stock, bring to a simmer and cook for 20 minutes.
- Stir in most of the basil, then blend until smooth.
- Season to taste and serve topped with the remaining basil.
