Spaghetti Aglio e Olio

A fast Italian classic of spaghetti tossed in garlic-infused olive oil with a kick of chilli and fresh parsley.

Ingredients

Servings: 2
  • 200 g spaghetti
  • 4 cloves garlic, thinly sliced
  • 5 tbsp olive oil
  • 0.5 tsp chilli flakes
  • 3 tbsp parsley, chopped
  • salt to taste

Method

  1. Cook the spaghetti in well-salted boiling water until al dente. Reserve a cup of pasta water before draining.
  2. While it cooks, warm the olive oil over low heat and gently fry the garlic and chilli flakes until the garlic is pale gold. Do not let it brown.
  3. Add the drained pasta to the pan with a splash of the reserved water and toss to coat.
  4. Stir through the parsley, season with salt, and serve immediately.
