Light, tender pancakes that come together from everyday pantry staples in under twenty minutes.

Ingredients

Servings: 4
  • 200 g plain flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 300 ml milk
  • 1 egg
  • 30 g butter, melted

Method

  1. Whisk the flour, sugar and baking powder in a bowl.
  2. In a jug, beat the milk, egg and melted butter together.
  3. Pour the wet into the dry and stir just until combined; a few lumps are fine.
  4. Cook spoonfuls in a lightly greased pan over medium heat until bubbles form, then flip and cook until golden.
