A vibrant, herb-packed Persian baked egg dish bursting with parsley, cilantro, and dill.

Ingredients

  • 6 large eggs
  • 1 cup chopped fresh parsley
  • 1 cup chopped fresh cilantro
  • 0.5 cup chopped fresh dill
  • 1 small onion, finely diced
  • 2 tbsp olive oil
  • 0.5 tsp turmeric
  • 1 tsp salt
  • 0.25 tsp black pepper

Method

  1. Preheat oven to 350F (175C) and lightly oil an ovenproof skillet.
  2. Saute the onion in olive oil over medium heat until soft, about 5 minutes.
  3. In a bowl, whisk the eggs with turmeric, salt, and pepper, then stir in all the chopped herbs and cooked onion.
  4. Pour into the skillet and cook 2 minutes until the edges set.
  5. Transfer to the oven and bake 20-25 minutes until firm and set in the center.
  6. Cool slightly, cut into wedges, and serve warm or at room temperature.
