Tender chicken braised in a savory-tangy sauce of soy, vinegar, garlic, and bay leaves.

Ingredients

  • 2 lb bone-in chicken thighs
  • 0.5 cup soy sauce
  • 0.5 cup white vinegar
  • 8 garlic cloves, crushed
  • 1 onion, sliced
  • 3 bay leaves
  • 1 tsp whole black peppercorns
  • 1 cup water
  • 1 tbsp cooking oil

Method

  1. Marinate the chicken in soy sauce and garlic for 20 minutes.
  2. Heat oil in a pot and brown the chicken pieces on both sides, then set aside.
  3. Saute the onion until soft, then return the chicken with the marinade.
  4. Add vinegar, water, bay leaves, and peppercorns; do not stir and let it come to a boil.
  5. Lower heat and simmer uncovered 30-35 minutes until the chicken is tender and the sauce reduces.
  6. Serve hot over steamed rice.
