- 4 cod fillets
- 1 lemon, juiced and zested
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 2 tbsp fresh parsley, chopped
- 1 tsp dried oregano
- 1 pinch salt and pepper
Method
- Preheat the oven to 200C (400F) and lightly oil a baking dish.
- Pat the cod fillets dry and place them in the dish.
- Whisk together the olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
- Spoon the mixture evenly over the fillets.
- Bake for 18-20 minutes until the cod flakes easily with a fork.
- Scatter with fresh parsley and serve with extra lemon wedges.
