A creamy dairy-free rice pudding simmered in coconut milk with a touch of vanilla, naturally sweet and comforting.

- 150 g short-grain rice
- 400 ml coconut milk
- 300 ml water
- 3 tbsp sugar
- 1 tsp vanilla extract
- 1 pinch salt
Method
- Rinse the rice under cold water until it runs clear.
- Combine the rice, water, and salt in a saucepan and bring to a gentle boil.
- Reduce the heat and simmer, stirring often, until most of the water is absorbed, about 12 minutes.
- Stir in the coconut milk and sugar and continue to simmer gently, stirring frequently, until thick and creamy, about 20 minutes.
- Remove from the heat and stir in the vanilla extract.
- Serve warm or chilled, topped with fresh fruit if desired.
