A speedy meat-free fried rice that rescues leftover rice.
Ingredients

- 300 g cooked rice
- 2 eggs
- 100 g peas
- 2 spring onions
- 2 tbsp soy sauce
Method
- Scramble the eggs in a hot wok and set aside.
- Fry the rice with the peas and spring onion.
- Return the egg, add soy sauce and toss.
