A speedy meat-free fried rice that rescues leftover rice.

Ingredients

  • 300 g cooked rice
  • 2 eggs
  • 100 g peas
  • 2 spring onions
  • 2 tbsp soy sauce

Method

  1. Scramble the eggs in a hot wok and set aside.
  2. Fry the rice with the peas and spring onion.
  3. Return the egg, add soy sauce and toss.
