Tender chicken braised in a savory-tangy sauce of soy, vinegar, garlic, and bay leaves.

- 2 lb bone-in chicken thighs
- 0.5 cup soy sauce
- 0.5 cup white vinegar
- 8 garlic cloves, crushed
- 1 onion, sliced
- 3 bay leaves
- 1 tsp whole black peppercorns
- 1 cup water
- 1 tbsp cooking oil
Method
- Marinate the chicken in soy sauce and garlic for 20 minutes.
- Heat oil in a pot and brown the chicken pieces on both sides, then set aside.
- Saute the onion until soft, then return the chicken with the marinade.
- Add vinegar, water, bay leaves, and peppercorns; do not stir and let it come to a boil.
- Lower heat and simmer uncovered 30-35 minutes until the chicken is tender and the sauce reduces.
- Serve hot over steamed rice.
