A soothing slow-simmered Chinese rice porridge brightened with fresh ginger, garlic, and scallions.

Ingredients

  • 1 cup jasmine rice, rinsed
  • 8 cups water or vegetable broth
  • 1 thumb fresh ginger, sliced
  • 2 cloves garlic, smashed
  • 1 tsp salt
  • 4 scallions, thinly sliced
  • 1 tbsp soy sauce or tamari
  • 1 tsp toasted sesame oil

Method

  1. Combine the rinsed rice, water or broth, ginger, garlic, and salt in a large pot and bring to a boil.
  2. Reduce to a gentle simmer and cook uncovered for about 60 minutes, stirring occasionally, until the rice breaks down into a creamy porridge.
  3. Discard the ginger slices and garlic if desired, then stir in the soy sauce.
  4. Ladle into bowls and top with sliced scallions and a drizzle of sesame oil.
