- 1 cup jasmine rice, rinsed
- 8 cups water or vegetable broth
- 1 thumb fresh ginger, sliced
- 2 cloves garlic, smashed
- 1 tsp salt
- 4 scallions, thinly sliced
- 1 tbsp soy sauce or tamari
- 1 tsp toasted sesame oil
Method
- Combine the rinsed rice, water or broth, ginger, garlic, and salt in a large pot and bring to a boil.
- Reduce to a gentle simmer and cook uncovered for about 60 minutes, stirring occasionally, until the rice breaks down into a creamy porridge.
- Discard the ginger slices and garlic if desired, then stir in the soy sauce.
- Ladle into bowls and top with sliced scallions and a drizzle of sesame oil.
