- 2 large eggs
- 4 whole flour tortillas
- 1/2 cup canned black beans, rinsed
- 1/2 cup corn kernels
- 3/4 cup shredded cheddar cheese
- 1 tbsp olive oil
- 1/4 tsp ground cumin
- salt and pepper to taste
Method
- Whisk the eggs with cumin, salt, and pepper. Scramble in a lightly oiled pan over medium heat until just set, then remove.
- Warm the black beans and corn in the same pan for 1-2 minutes.
- Lay a tortilla in the pan, sprinkle with cheese, then add the eggs, beans, and corn. Top with more cheese and a second tortilla.
- Cook over medium heat until the underside is golden, about 2-3 minutes, then flip and cook the other side until crisp and the cheese melts.
- Slice into wedges and serve warm.
