Crispy tortillas stuffed with scrambled eggs, black beans, sweet corn, and melted cheese for a protein-packed breakfast.

  • 2 large eggs
  • 4 whole flour tortillas
  • 1/2 cup canned black beans, rinsed
  • 1/2 cup corn kernels
  • 3/4 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • 1/4 tsp ground cumin
  • salt and pepper to taste

Method

  1. Whisk the eggs with cumin, salt, and pepper. Scramble in a lightly oiled pan over medium heat until just set, then remove.
  2. Warm the black beans and corn in the same pan for 1-2 minutes.
  3. Lay a tortilla in the pan, sprinkle with cheese, then add the eggs, beans, and corn. Top with more cheese and a second tortilla.
  4. Cook over medium heat until the underside is golden, about 2-3 minutes, then flip and cook the other side until crisp and the cheese melts.
  5. Slice into wedges and serve warm.
