A creamy dairy-free rice pudding simmered in coconut milk with a touch of vanilla, naturally sweet and comforting.

Ingredients

  • 150 g short-grain rice
  • 400 ml coconut milk
  • 300 ml water
  • 3 tbsp sugar
  • 1 tsp vanilla extract
  • 1 pinch salt

Method

  1. Rinse the rice under cold water until it runs clear.
  2. Combine the rice, water, and salt in a saucepan and bring to a gentle boil.
  3. Reduce the heat and simmer, stirring often, until most of the water is absorbed, about 12 minutes.
  4. Stir in the coconut milk and sugar and continue to simmer gently, stirring frequently, until thick and creamy, about 20 minutes.
  5. Remove from the heat and stir in the vanilla extract.
  6. Serve warm or chilled, topped with fresh fruit if desired.
