Flaky cod fillets baked with lemon, garlic, and fresh herbs for a light, protein-rich dinner ready in under 30 minutes.

  • 4 cod fillets
  • 1 lemon, juiced and zested
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • 1 pinch salt and pepper

Method

  1. Preheat the oven to 200C (400F) and lightly oil a baking dish.
  2. Pat the cod fillets dry and place them in the dish.
  3. Whisk together the olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
  4. Spoon the mixture evenly over the fillets.
  5. Bake for 18-20 minutes until the cod flakes easily with a fork.
  6. Scatter with fresh parsley and serve with extra lemon wedges.
