A warming, budget-friendly bowl of spiced lentils — naturally vegan and freezer-friendly.

Ingredients

Servings: 4
  • 250 g red lentils
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, chopped
  • 1 tbsp curry powder
  • 700 ml water or stock

Method

  1. Rinse the lentils until the water runs clear.
  2. Soften the onion and garlic in oil, then stir in the curry powder for a minute.
  3. Add the tomatoes, lentils and water, then simmer for 25 minutes until thick, stirring now and then.
  4. Season well and serve with rice or flatbread.
