Stir-fried rice noodles with chicken, egg and a sweet-tangy tamarind sauce.

- 200 g rice noodles
- 1 chicken breast, sliced
- 2 eggs
- 3 tbsp soy sauce
- 50 g peanuts
Method
- Soak the noodles until pliable.
- Stir-fry the chicken, push aside and scramble the eggs.
- Add noodles and sauce, toss over high heat.
- Serve topped with crushed peanuts.
