A rustic French baked custard studded with sweet cherries and dusted with powdered sugar.

  • 2 cups pitted cherries
  • 3 large eggs
  • 0.5 cup granulated sugar
  • 0.5 cup all-purpose flour
  • 1 cup whole milk
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 1 tbsp powdered sugar, for dusting

Method

  1. Preheat the oven to 350F and butter a baking dish. Scatter the cherries across the bottom.
  2. Whisk the eggs and sugar until pale, then whisk in the flour and salt.
  3. Gradually whisk in the milk and vanilla until smooth, then pour over the cherries.
  4. Bake 40 minutes until puffed and golden and just set in the center.
  5. Cool slightly, dust with powdered sugar, and serve warm.
