Stir-fried rice noodles with chicken, egg and a sweet-tangy tamarind sauce.

Ingredients

  • 200 g rice noodles
  • 1 chicken breast, sliced
  • 2 eggs
  • 3 tbsp soy sauce
  • 50 g peanuts

Method

  1. Soak the noodles until pliable.
  2. Stir-fry the chicken, push aside and scramble the eggs.
  3. Add noodles and sauce, toss over high heat.
  4. Serve topped with crushed peanuts.
