A juicy roasted pork tenderloin brushed with a sweet-and-tangy maple Dijon glaze and fresh thyme.

Ingredients

  • 1.25 lb pork tenderloin
  • 2 tbsp Dijon mustard
  • 2 tbsp maple syrup
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme leaves
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method

  1. Preheat the oven to 400F (205C). Pat the pork tenderloin dry and season all over with salt and pepper.
  2. In a small bowl, whisk together the Dijon mustard, maple syrup, garlic, and thyme.
  3. Heat the olive oil in an ovenproof skillet over medium-high heat. Sear the tenderloin on all sides until browned, about 6 minutes total.
  4. Brush the pork generously with the maple-mustard glaze, then transfer the skillet to the oven.
  5. Roast for 15-18 minutes until the internal temperature reaches 145F (63C). Rest for 5 minutes, then slice and serve.
