A warming, budget-friendly bowl of spiced lentils — naturally vegan and freezer-friendly.

- 250 g red lentils
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tomatoes, chopped
- 1 tbsp curry powder
- 700 ml water or stock
Method
- Rinse the lentils until the water runs clear.
- Soften the onion and garlic in oil, then stir in the curry powder for a minute.
- Add the tomatoes, lentils and water, then simmer for 25 minutes until thick, stirring now and then.
- Season well and serve with rice or flatbread.
