Air Fryer Hasselback Potatoes


  • 1 Air Fryer


  • 10 medium red potatoes
  • 1 tbsp vegetable oil
  • 4 tbsp melted butter
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp dijon mustard
  • salt and pepper to taste


  • Wash the potatoes and slice them like a fan - about 3/4 of the way to the bottom.
  • In a large bowl, mix together the vegetable oil, melted butter, parsley, mustard, salt and pepper.
  • Add the potatoes and toss until well coated

  • Transfer into the air fryer tray. Pour the remaining mixture over the potatoes and cook for 20 minutes at 360 F / 180 C or until golden and fork tender.

  • Serve with mustard and sprinkle with extra chopper parsley. Enjoy!
