The charro cooking of northern Mexico is simple, built around grilled beef (free-range Mexican beef is delicious!) and all kinds of chiles, such as chipotles and poblanos. Fajitas originated here in the high country, where cowboys and cooks sear green chile rajas with onions and thinly sliced grilled steak over a wood fire in a wok-like metal pan called a disco .  Off the plains and in the cities, fajitas are often served with a garlicky chimichurri sauce and avocado.
