Quick Chicken Pho
Originally, pho was a simple bowl of broth, noodles, and boiled beef. Chicken pho was unheard of until 1939, when some pho shops started serving up a chicken option, most likely due to government regulation that prevented the sale of beef on Mondays and Fridays. Initially, pho-purists were appalled, but in the end chicken gained acceptance. Today, some pho shops even specialize in pho ga (chicken pho). Garnish the dish with some fresh mint, which is often enjoyed with pho in Vietnam – particularly in Hanoi, the hub for the original pho.
