Honey and Miso Roasted Chinese Eggplant
At my restaurant, very few dishes make repeat appearances every year, but this one just keeps getting better! The texture of the eggplant is creamy like custard, and it reminds me of a dish I had once in a sushi restaurant that still registers in my mind as one of the greatest things I’ve ever eaten. This dish pays homage to the traditional Eggplant Nasu, and brings together some of summer’s best flavors.
