Epazote, Mushroom, and Roasted Corn Quesadilla
Whether it’s in the late afternoon or the wee hours of the morning, a quesadilla is the ultimate snack - delicious and requiring absolutely no fuss. Sammy digs a little bit of epazote, a funky aromatic herb common in Mexican cuisine, in his quesadillas. Epazote, roasted corn, and sautéed mushrooms provide just the right amount of wild to take the classic combo of melty cheese in a warm crisp tortilla to another level.
