Coconut Dream Fish
This coconut dream fish is one of Ziggy Marley's favorite creations from his Ziggy Marley & Family Cookbook. Coconut has been an integral ingredient in Jamaican cooking for years. This is his take on the traditional Jamaican brown stew. Here, the sea bass is lightly pan fried with coconut oil. The sauce is slowly cooked down with onion, garlic, and a variety of spices and herbs. Ziggy prefers fresh herbs and spices, to give the brightest, strongest flavor. The sauce is finished with coconut milk, which adds creaminess and a deep coconut flavor.
