Air Fryer Hasselback Potatoes

  • Air Fryer
  • 10 medium red potatoes
  • 1 tbsp vegetable oil
  • 4 tbsp melted butter
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp dijon mustard
  • salt and pepper to taste
  1. Wash the potatoes and slice them like a fan – about 3/4 of the way to the bottom.
  2. In a large bowl, mix together the vegetable oil, melted butter, parsley, mustard, salt and pepper.
  3. Add the potatoes and toss until well coated
  4. Transfer into the air fryer tray. Pour the remaining mixture over the potatoes and cook for 20 minutes at 360 F / 180 C or until golden and fork tender.
  5. Serve with mustard and sprinkle with extra chopper parsley. Enjoy!
