Air Fryer Hasselback Potatoes
- Air Fryer
- 10 medium red potatoes
- 1 tbsp vegetable oil
- 4 tbsp melted butter
- 2 tbsp fresh parsley, chopped
- 1 tbsp dijon mustard
- salt and pepper to taste
- Wash the potatoes and slice them like a fan – about 3/4 of the way to the bottom.
- In a large bowl, mix together the vegetable oil, melted butter, parsley, mustard, salt and pepper.
- Add the potatoes and toss until well coated
- Transfer into the air fryer tray. Pour the remaining mixture over the potatoes and cook for 20 minutes at 360 F / 180 C or until golden and fork tender.
- Serve with mustard and sprinkle with extra chopper parsley. Enjoy!
