Air Fryer Potato Balls
- Air Fryer
- 3 cups leftover mashed potatoes
- 2 eggs, lightly beaten
- 1/3 cup bacon bits
- 3/4 cup shredded cheddar cheese
- 2 tsp chopped thyme
- 3 tbsp butter, room temperature
- 3/4 cup dry bread crumbs
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 tsp salt
- In a large bowl, place the mashed potatoes, eggs, bacon, cheddar cheese, thyme, butter, 1/4 cup bread crumbs, garlic powder, salt and black pepper.
- Mix all ingredients together until wellcombined.
- Shape into balls and roll each ball in theremaining bread crumbs.
- Put in the refrigerator for 30 minutes to retainthe shape.
- Spray the air fryer tray with cooking spray, thenplace the potato balls. Cook for 15 minutes at 400 F/ 200C. Rotate and cook foranother 5 minutes or until golden. Enjoy!
